BIGARREAU

This is the first cherry variety to reach maturity. The skin is red, dark red or vermilion to blackish and the flesh is either red or dark red. It has a medium/firm texture and a sweet, juicy taste. Harvest lasts from May 11 to May 30.

FERROVIA

This is the most widespread variety in Apulia. The skin is red or red-vermilion and the flesh is pink. It is heart-shaped and sometimes flattened. The flesh is firm and crispy with a juicy, sweet flavour. Harvest lasts from May 28 until June 25.

GIORGIA

Large fruit which is wider than it is long. The skin has a bright red colour that turns to dark red at full maturity. The flesh is red and very firm with optimal gustatory qualities. Harvest lasts from May 20 until June 20.
